BBQ Chicken Quesadillas
These BBQ chicken quesadillas are what I make on those nights when I need dinner on the table fast and everyone is starving. Using rotisserie chicken is my secret weapon - it gives you perfectly seasoned, tender chicken without any extra cooking time. Just shred it, mix with BBQ sauce, and you are ready to go.
The combination of tangy BBQ sauce, gooey melted cheese, and crispy red onion is absolutely addictive. My kids request these at least once a week, and honestly I never get tired of them either. They are also great for using up leftover chicken from other meals.
Serve these with ranch or extra BBQ sauce for dipping, plus some quick pickled jalapenos if you like heat. A simple side salad rounds it out into a complete meal.

- 2 cups shredded rotisserie chicken
- 1/2 cup BBQ sauce plus more for serving
- 8 large flour tortillas
- 2 cups shredded cheddar cheese
- 1/2 red onion, thinly sliced
- Fresh cilantro, chopped
- 2 tablespoons butter
- Ranch dressing for dipping

Prep the Filling
In a bowl, combine the shredded chicken with the BBQ sauce and mix until evenly coated. Have all your other toppings ready and within reach for easy assembly.

Assemble Quesadillas
Lay a tortilla flat. Spread a quarter of the cheese on half of the tortilla, then add a quarter of the BBQ chicken, some sliced red onion, and a sprinkle of cilantro. Fold the tortilla in half.

Cook Until Crispy
Melt butter in a large skillet over medium heat. Add the quesadilla and cook for 2-3 minutes until the bottom is golden and crispy. Flip carefully and cook another 2-3 minutes until cheese is melted throughout.

Transfer to a cutting board and let rest for 1 minute. Cut into wedges and serve immediately with extra BBQ sauce and ranch dressing for dipping. Repeat with remaining quesadillas.

- Use rotisserie chicken. It is already seasoned and saves tons of time.
- Medium heat is key. Too high and the tortilla burns before cheese melts.
- Press gently while cooking. This helps everything stick together.
- Make them in the oven. Bake at 400F on a sheet pan for hands-off cooking.
- Mix up the cheese. Monterey Jack or pepper jack are great too.
