This Mediterranean shrimp skillet is what I make when I want something that feels fancy but is actually ridiculously easy. The combination of juicy shrimp, tangy tomatoes, briny olives, and creamy feta is like a trip to the Greek islands in a single pan. Best of all, it comes together in about 25 minutes.

I love that this is a one-pan meal. Everything cooks together and the shrimp soak up all those amazing Mediterranean flavors. Serve it with crusty bread to soak up the garlicky tomato sauce, or over orzo or rice for a more substantial meal.

This is also one of my go-to recipes when we have guests because it looks impressive but requires almost no effort. Just do not tell them how easy it was.

    Build the Sauce

    Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes and cook for 30 seconds until fragrant. Add the diced tomatoes with their juices, olives, and oregano. Simmer for 8-10 minutes until slightly thickened.

    Add the Shrimp

    Season the shrimp with salt and pepper. Nestle them into the tomato sauce in a single layer. Cover and cook for 3-4 minutes until shrimp are pink and just cooked through. Do not overcook or they will be rubbery.

    Add the Feta

    Scatter the crumbled feta cheese over the top of the dish. Cover again for 1-2 minutes just until the feta begins to soften slightly but does not fully melt.

    Serve Immediately

    Remove from heat and garnish with fresh parsley. Serve immediately with lemon wedges on the side and crusty bread or over orzo for soaking up all that delicious sauce.
